Our menu this month will be:

Baked Ziti (can be made ahead and frozen)

Green beans

Peaches

Garlic bread

Cookies

Crockpot Green Beans – One Crockpot

8 cans green beans (regular size)-drain all but 2 of them

1 small bag bacon pieces

7 tsp. soy sauce

2 tsp. garlic powder

2/3 c. brown sugar

1/4 c. melted butter

Instructions

  1. Dump green beans and liquid from 2 cans in the slow cooker. 
  2. Add in the rest of the ingredients and mix well. 
  3. Cook on low until heated through- about 2 hours.

Baked Ziti – One 9×13 pan

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, finely chopped

5 cups marinara sauce (about 46 oz.)

1 tsp. salt

1 tsp. pepper

1 16 oz. box of ziti or penne pasta

1 c. ricotta cheese or cottage cheese

1/2 c. grated Parmesan, divided

1/4 tsp. salt

8 oz. shredded mozzarella cheese, divided

Instructions

  1. Heat oven to 375 degrees.  Cook pasta according to directions and drain.
  2. Heat oil in large skillet and saute onions and garlic until softened, about 12 minutes.  Season with salt and pepper. Add marinara and bring to a simmer.
  3. Make ricotta filling. Stir together ricotta, 1/4 c. Parmesan, and salt in a small bowl.
  4. Return pasta to pot. Add half of the sauce (about 3 cups) and stir until pasta is well coated. Add ricotta mixture to the pasta and gently fold it in.  
  5. Transfer 1/2 the pasta mixture to a lightly greased 9×13 pan making it in an even layer. Sprinkle with 1/2 of the mozzarella. Top with remaining pasta in an even layer. Pour the remaining sauce over the pasta and spread in an even layer. Sprinkle the remaining mozzarella and remaining 1/4 c. Parmesan. 
  6. Bake uncovered until the edges are bubbling and the cheese is completed melted, about 30 minutes. 
  7. The dish can be assembled and refrigerated, covered in foil, up to 2 days in advance. It can also be frozen in the baking dish, just let cool completely and wrap in foil.

Enchilada Casserole – one 9×13 pan

Preheat your oven to 375 degrees. Spray a 9 by 13-inch baking dish with cooking spray and set aside.
Enchilada Filling
1. 2 pounds ground beef
2. 2 packets taco seasoning
3. 1 tsp crushed red pepper
4. 1 small onion diced
5. 1 4.5 ounces can diced green chiles
6. 1 can black beans drained and rinsed
Instructions
1. In a large skillet cook chopped onion until soft, add the ground beef and cook until brown breaking it up as you go. Drain off fat.
2. Season ground beef with taco seasoning according to packet directions.
3. Add crushed red pepper.
4. Add black beans (drained and rinsed)
5. Add chopped green chilies.
6. Cook until heated through.
Enchilada Topping
1. 1 container light sour cream
2. ¼ cup flour
3. 1 4.5 oz can diced green chilies
Instructions
1. In a skillet heat sour cream through.
2. Whisk in ¼ cup flour until thickened.
3. Add chopped green chilies.
Enchilada Layers
1. 1 can enchilada sauce
2. 18 corn tortillas (6 inches)
3. 1 8oz package sliced pepper jack cheese
Instructions
1. Spray 9×13 with cooking spray.
2. Spread 1/3 can enchilada sauce in bottom of the casserole dish.
3. Layer in 6 tortillas.
4. Divide the beef mixture in half and add half of it to the top the tortillas in the pan.
5. Top with half of the pepper jack cheese slices
6. Layer on 6 more tortillas and spread 1/3 can enchilada sauce on them.
7. Add the remaining beef mixture.
8. Top with rest of the pepper jack.
9. Place remaining 6 tortillas on top.
10. Spread the remaining enchilada sauce on the tortillas.
11. Top with sour cream chili sauce
Bake uncovered for 20-22 minutes until heated through and bubbly on the edges

Spanish Rice- one batch

2 packs Knorr 5.6 oz Spanish Rice mix.

1 Can Black Beans

1 batch yields 12 servings.

17 Batches needed.

Brownies – one 9×13 pan

Please use 2 box brownie mixes in a 9×13 pan.

Cut into 12 pieces.

17 pans of brownies needed.

Spaghetti Casserole – one 9×13 pan

1 pkg. 16 oz angle hair pasta
2 lbs Italian Sausage
1 medium onion, finely chopped
1 tblsp. garlic granules
1 tblsp. oregano
1 tsp. crushed red pepper
½ tsp. salt
¼ tsp. pepper
¼ cup Parmesan/Romano Cheese (just the stuff in the green can)
2 cans Hunt’s Four Cheese Pasta Sauce (14.5 oz)
3 cups shredded Italian Blend Cheese (can be just mozzarella if you don’t find Italian blend)

9×13 backing pan.

Cook pasta according to package directions, drain.
In a large skillet cook Italian sausage and chopped onion over medium heat for 10 minutes until sausage is no longer pink and onions are translucent, breaking up sausage into crumbles, drain.
Stir in pasta sauce and spices, bring to a simmer for 10 minutes.
Combine pasta with meat sauce and place in a greased 9in x 13in
Bake at 350 degrees for 20 minutes
Top with shredded cheese and bake an additional 10 minutes until cheese is melted.  

Brownies – one 9×13 pan

2 box Fudge Brownie mixes per 9×13.

Prepare mixes as directed.

Bake  in one 9 x 13 pan.

Cut into 12 Brownies and bag the brownies, 1 per zip lock bag.

Swedish Meatballs – 13 crocks needed

Ingredients

  • 3 bags Great Value Homestyle Meatballs, Family Size, 48 oz
  • 2 cans Beef Consomme
  • 1 16oz container sour cream (I use light)
  • 1/2 cup flour
  • 1 cup water

Allow the Meatballs to thaw slowly in the fridge overnight.  They are already fully cooked and we only want them to heat through in the crock pot.

Mix 1/2 cup flour with 1 cup water until smooth as a thickening.

Add both cans of consomme to a pan, medium high heat until slightly bubbling.

Whisk in thickening, stir until mixture thickens.

Stir in the container of sourcream until smooth.

Place thawed meatballs in the crock pot, cover in sauce, turn on low until slightly bubbling then turn down to keep warm – over heating can be a problem.

Walmart GV Homestyle Meatballs

Butter Noodles – 19 packages needed

  • 1 16 oz bag egg noodles – boiled as directed
  • 1/2 stick butter
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tbsp parsley

Cook noodles then add all ingredients and stir until butter is melted 🙂

Brownies – 13 9×13 pans needed

2 box mixes per 9×13 pan.

Please cut each 9×13 pan into 12 pieces and place individual brownies in a ziplock bag.

Salad

Salad fixings will come from Sam’s club.  Please feel free to contribute money to cover the cost

White Chicken Chili Recipe

6 cans white great northern beans (drained)
2 medium onions
4 cloves minced garlic or 4 tsp. garlic granules
3 – 4 oz cans chopped green chiles
2 tablespoons ground cumin
1 tablespoon dried oregano
1 tsp cayenne pepper
4 packets McCormick White Chicken Chili mix
4-6 cups chicken broth

Saute onions and garlic then mix all ingredients listed above. Bring to a boil and simmer until thickened. Add 6 cups cooked chopped chicken (medium to finely chopped)
When thickened and simmer an additional 5-10 minutes to heat chicken through.

Makes approximately 18 cups
